Please note that the menu changes regularly as most ingredients are seasonal.

COSTES
ORGANIC RESTAURANT
Statement:
We work
exclusively with farm and organic products, all animals are naturally fed and no GM
ingredients or chemicals are used in our products.
We only
buy wild fish, organic by nature.
Our ducks
are bred according to the organic farming regulations (organically fed, no antibiotics
)
and certified by ecocert (equivalent to Soil Association).
We choose
mainly products by Nature and Progress, Biodivin, Demeter, or at least organic... (except
some herbs, spices and salt which is not under its regulation).
We know
personally the majority of our suppliers, they have produced organically according to the
ethics of nature for a long time.
Whenever possible we try to adhere to the above principles, though
sometimes this may not be possible. We ask you to excuse this.

Trout from the Pyrenees
The
trout we serve you come nearly exclusively from the Lac de Montbel in the Ariège,
nourished by the pure waters of the Pyrenees; bred with passion, under strict organic
rules, in ideal conditions, with amber-coloured flesh that will familiarise you with the
taste and delicacy of bygone days.
